This one pan chicken feta orzo effortlessly combines the rich flavors of tender chicken, creamy feta cheese and perfectly cooked orzo pasta. As you savor each bite, the tanginess of the feta combines beautifully with the artichokes, spinach and tomatoes to create a burst of Mediterranean flavors. This meal is not only absolutely delicious, but it is so easy to make and only uses one pan! It is also great for meal prep too!

Ingredients
- Chicken breast, diced
- Avocado oil
- Salt
- Pepper
- Garlic powder
- Chili Flakes
- Fresh herbs (basil, chives, rosemary, dill), minced
- Garlic Cloves, minced
- Juice of half a lemon
- Sliced Artichoke hearts
- Cherry or Grape Tomatoes
- Fresh spinach
- Sun-dried tomatoes
- Feta Cheese
- Orzo, dry
- Chicken Bone Broth or Chicken Broth
- Water

Instructions
1. Preheat your oven to 400 F and set your rack to the middle position.
2. Grab a large baking pan (9×13). Add your diced chicken breast, avocado oil and seasonings. Next add your fresh herbs, garlic, lemon juice, sliced artichokes, cherry tomatoes, fresh spinach and sun-dried tomatoes. Toss until everything is well combined and the seasonings are evenly distributed.
3. Create a whole in the center and add your feta cheese. Next add in your orzo, bone broth and water. Use a spatula to push down your orzo into the liquid and make sure everything is evenly distributed.
4. Place in the oven and bake for about 35-40 minutes or until your orzo is cooked through! Let set for 10 minutes before serving. Mix and serve!
Hint: The dish may appear watery upon pulling the dish out of the oven. Do NOT Panic! This is very normal. Orzo takes some time to absorb all of the water, so trust the process and wait 10 minutes before serving. The orzo will soak up the water and it will come out perfect!

Made this last night and it was delicious! Leftovers for lunch – also amazing. Spinach isn’t noted in recipe instructions – I threw it in just before the bone broth and tried to press it under liquid… probably should put it in with sundried tomatoes and then mix… before orzo.

How much is a half block of feta? My block is 8 oz which looks similar to the size in the video.

Hey Kimberly, half a block of feta is 4 oz. The one I used in the video is cut hamburger style in half (pre-cut from Trader Joes) which is why it looks like an 8 oz block. Hope that helps!
